N.V. Le Chiuse Olio Extra Vergine di Oliva
Our extra vergine olive oil comes from olives grown exclusively at Le Chiuse. It derives from different olilve varieties, mainly Frantoio, Leccino and Pendolino, from nearly 6 hectares of trees at an altitude of about 600 meters. The olives are gathered in November, when still not too ripe, in order to make an oil rich in nutritive elements and vitamins. The cold pressing and milling of the under-ripe olives results in lower yields but superior quality. The oil is not filtered, as in the past, to retain its natural character and authentic flavor.
